Chicken Kiev

Serves: 4

Time: 15 minutes preparation, 10 minutes cooking

· 2 large boneless chicken breasts

· 100g / 4oz ready prepared garlic butter

· 50g / 2oz seasoned flour

· 1 large egg beaten

· 100g / 4oz dried white breadcrumbs

· Pura Solid Vegetable Oil for deep frying

Cut each chicken breast through lengthways to make four pieces. Place the pieces between damp greaseproof paper and flatten with a rolling pin until doubled in size.

Divide the butter into four and place in the centre of each chicken breast. Fold the meat around the butter so it is completely encased.

Coat each parcel in seasoned flour then brush with egg and toss in the breadcrumbs. Repeat the egg and breadcrumb coating once more to ensure the parcels are completely sealed.

Heat enough Pura Solid Vegetable Oil in a deep fryer so it is about half full to 180°C / 350°F. Place the parcels two at a time in the basket and fry for 7-10 minutes until golden brown and cooked through.

Serve with French fries and lime slices.
