Quick Apple and Cheese Bread

Serves: 8
Time: 15 minutes preparation, 30-40 minutes cooking
· 175g / 6oz plain white flour
· 2 tsp baking powder
· Salt and freshly ground black pepper
· 100g / 4oz plain wholemeal flour
· 50g / 2oz Pura Solid Vegetable Oil, grated
· 1 small eating apple, peeled and grated
· 100g / 4oz strong mature cheese, grated
· 25g / 1oz sunflower seeds
· 1 medium egg, beaten
· 4-5 tbsp milk
Preheat oven to 190°C / 375°F / Gas Mark 5.
Sift the white flour, baking powder and seasoning into a large bowl. Stir through
the other flour, Pura Solid Vegetable Oil, apple, cheese and almost all sunflower
seeds. Whisk the egg and milk together and mix into the dry ingredients to make
a soft dough.
Turn onto a floured surface and knead gently into a 15-18cm / 6-7 inch round.
Place on a lightly greased baking tray and score the top lightly. Press the reserved
sunflower seeds into the top then bake the loaf for about 30-40 minutes until
golden brown. Cool slightly before serving. Best eaten fresh.
